Chocolate Chip Blueberry Muffins

Chocolate Chip Blueberry Muffins

(makes 12 muffins)

1 cup all-purpose flour

3/4 cup oats

1 tbsp flax seed

1tbsp baking powder

1/4 tsp salt

1 tsp cinnamon

.75 cup milk (I used almond milk, but any will work)

.5 cup greek yogurt

1 tsp vanilla

1/4 cup agave

1 cup fresh blueberries

.5 cup chocolate chips (I used semi-sweet, but I’m sure dark chocolate would be great!)

.5 cup walnuts (optional)

 Bake 425 15-20 min

Pre-heat oven to 425

In a bowl, mix flour, oats, flax, baking powder, salt, and cinnamon together

In a separate bowl, mix milk, yogurt, vanilla and agave together

Slowly stir dry into wet (or wet into dry), fold in blueberries, chocolate chips and walnuts if you are adding them.

Be sure not to over mix, or the muffins will get tough.

Grease muffin pan (or put in cupcake liners) and fill up with batter.

Happy National Blueberry Muffin Day!!

This Week’s Weekly Challenge: Exercise Daily

I will be doing some form of exercise everyday, whether it’s for 10 minutes or an hour. I think it’s really important to always put some time in your day to workout, not only for your health, but to make you feel good! I’ll be posting my workouts everyday to keep record. You’re all welcome to join me!

Weekly Challenge #2: Vegetarian Week Recap

Monday 6/27: I started off WC#2 with a bang!!

What’s better than cake for breakfast? You guys sent me some great comments about fully giving up all meat…including fish. This was my main concern because it is really the only meat I eat lately. Later on, I gave you a few health benefits of being vegetarian.

Tuesday 6/28: I started off Tuesday morning with a protein-filled greek yogurt bowl. By far one of my favorite breakfasts!!

I also answered a question asked on my Q&A page. Make sure to send me a question on my Q&A page or email it to me at I really do want to hear from you!

Later that night I shared with you a great Veggie Wrap with Spicy Peanut Sauce recipe! You guys really seemed to like this recipe, especially the addition of sour green apple!

Be sure to try it out and let me know what you think.

Wednesday 6/29: Wednesday morning I shared a few morning confessions. It feels good to know I’m not the only one who doesn’t wash her fruits & vegetables! (sorry Mom). I was not feeling good at all through the day. The second I got home I knew I wanted a grilled cheese and soup! Can’t fight that comfort food.

Thursday 6/30: Thursday morning started off with one of my other favorite breakfasts and the best smoothie I’ve ever had!!

Later that night I did something bad…I ate shrimp, which is obviously not vegetarian. Luckily, I forgave myself and hopped right back onto the challenge bandwagon!

Friday 7/1: Friday morning brought another smoothie in a bowl! I seriously can not get enough of smoothies. They are way too good!!

Saturday 7/2:
Saturday’s morning started off a little rocky, but I ended up eating REAL food once we arrived in Arizona. Thank goodness!

Even though I did slip up once, I am so happy I did this challenge. I proved to myself there are a ton of great meals focusing on veggies. Now I have a reason to chop up some extra veggies….hello veggie wraps with spicy peanut sauce!!!!

Vegetables are Good

If you remember, this morning I announced this week’s challenge…being completely vegetarian for a week. Since November I have cut back on my meat consumption and the only meat I ate was fish and some chicken. This week I am going without any meat, including fish. I am using this week to document how I’m feeling while living off a plant-based diet and learning new, creative ways to use veggies. While this week obviously isn’t going to give me the whole picture of being vegetarian (parties, holidays, life occurrences) I will be more aware of my diet options. Eventually, maybe giving up fish won’t seem so difficult.

Benefits of Vegetarianism:

Reduced risk of heart disease

Lower blood pressure

Control of Diabetes

Easier digestion of food

NOTE: I’m not a medical professional or RD. Before you switch or experiment with your diet you should talk with a professional.

For dinner tonight I had leftovers of last night’s pasta (without the shrimp of course). If you haven’t made it yet, you need to now.

Tomorrow I’ll have a great vegetarian recipe for you to kick off the week!

Cake for Breakfast

I have always really disliked Mondays. Mondays meant there’s 5 more days until Saturday, and that’s just not ok. Mondays have always brought sluggishidon’twanttogetoutofmywarmbed mornings. That’s why I had cake for breakfast.

Yes, that’s right. Cake. Am I crazy? Maybe. But if eating cake for breakfast is wrong, I don’t want to be right. I made Averie’s Banana Oat Cake this morning. In my cake I had banana, oats, brown sugar, cinnamon, nutmeg, strawberries & peanut butter on top. Yuuuuuuum!

So, because Mondays can be a little lame, I thought I would spice things up a bit & start weekly challenges. Every Monday I will choose a new challenge for myself, and you all are welcome to join in with me! Last week I challenged myself to follow a recipe for 1 meal everyday. This week will be a little require a little bit more creativity…drumroll please….

This week’s challenge: Go vegetarian for the week.

I was pretty much following a vegetarian diet up until a month ago, but the past month I have been slacking. This week I would like to reintroduce myself to fruits and vegetables and not rely on fish and chicken to get my protein in. There are so many different fruits and vegetables out there, I’m excited to learn new ways to work with my usual vegetables as well as try new ones! Throughout the week I will be going a little more in depth with my food to help those who aren’t following the challenge better understand of a vegetarian diet.

Are you going to follow this challenge? If so, what are some of your concerns about giving up meat for the week?
