Meal Planning: Weekly Food Staples Part 1

Shopping:

I was planning on going to Trader Joe’s and Whole Foods, but it turned into TJ’s and Raleys. Oh well!

TJ’s Finds:

almond smooth almond milk

sugar, chocolate coffee bean grinder (yum!!!!)

unsweetened applesauce

s’mashing s’mores (double yum!!!!!!)

Raleys Finds:

coffee house vanilla caramel cream

rosemary

lemon

honey graham crackers

Now that the boring stuff is over, can we talk about this?

This, my friends, is a S’mashing S’more. It’s pretty much a baby s’more covered in chocolate. I’m addicted and I want to eat the entire box. But I won’t because that’s a $3 little box of deliciousness.

Lunch:

So, I didn’t really have a “real” lunch..once I got home from shopping I really had good intentions. I started off with a leftover smoothie and 1 S’mashing S’more and then everything went downhill! I decided to finish up a recipe I’ve been writing (which you will see very soon), and I ate one of the baked goods. So pretty much for lunch I had a smoothie, baked good and a s’more.

At least the smoothie had spinach in it.

That cancels everything eles out, right?

Dinner:

For dinner I had leftover Annie’s leftover White Cheddar mac & cheese with shrimp and a little buffalo sauce added in, and on the side a rosemary butter baked sweet potato! So good.

Rinse sweet potato & dry off. Rub potato in olive oil and place in microwave until fully cooked. Once finished, cut upen sweet potato and top with butter and chopped up rosemary. Delish!

Meal Planning:

Today is Sunday aka my favorite food day of the week.

Sunday’s are kind of random, all over the place days where I rush to get everything ready for the week. A typical Sunday includes taking an hour to get out of bed, an extra cup of coffee, walking all the out to the mailbox in my sweats and realizing there’s no mail Sundays, trying to work out, sometimes failing, hours at the grocery store, talking myself out of hours at the mall, calling businesses and remembering no one is open Sundays, oh yea, and preparing food for the week.

There are a few items that I absolutely always have to have.

greek yogurt

almond milk

strawberries

oats

spinach

nut butter

blueberries

frozen bananas

carrots

other random fruits (this week it’s peaches)

Every Sunday I cut up some fruits & veggies for the week. Today it was bananas to freeze and carrots to turn into carrot sticks

I sometimes plan out my meals for the week, so Sunday is my day to prepare everything for those meals. This week isn’t action-packed so I should have time everyday to prepare things as the days come.

Meal Planning: Traveling

Traveling can be stressful, hectic, annoying and one big hassle. The airplane makes you germy, you have to go to the bathroom 10x more than usual during roadtrips and let’s face it, you don’t eat as many veggies as you should while your laying by the pool at your hotel sipping cold drinks.

It’s ok, I won’t tell.

After reading this post of the Meal Planning series, you won’t have to count that chunk of pineapple sitting on the rim of your glass as your only fruit you’ll eat that week.

Or you can. Again, I won’t tell.

Airplane:

I don’t know about you, but traveling on an airplane is pretty much the most uncomfortable feeling in the world to me. You’re super stressed about getting to the airport on time. Security is taking forever. You have exactly 2 seconds to take your shoes and jacket off, place them on the belt along with your bag, purse, pillow and computer (which you have taken out of your bag). Make sure it is only 2 seconds though, otherwise you will get barked at for not going superspeed. Then, you have about 3 seconds to quickly throw all of your stuff off of the belt, put your shoes on, jacket on, computer in your bag, grab all your stuff and run to the gate only to find out your flight is delayed and you get to sit there for an hour. So what do you do? Buy a couple $10 celebrity gossip magazines to see if David Beckham is single yet? Paint your nails? Go buy a $20 bag of chips? No you will not, because you planned ahead!!

Dried Fruit (Sometimes they don’t let you take this through security…if not, do the puppy dog face. If you do it right, you can get anything.)

(this was taken after my dust/wind/rain storm at the Grand Canyon so it’s a little more miserable than usual…but you get the idea)

Popcorn

TrailMix (yes, trail mix with m&m’s still count. I can’t stand raisins, or “little brains” as my brother calls them, so I substitute them with chocolate!)

Sandwiches (I leave off the mustard until I get into the airport and just grab the little packets)

Pretzels

Ridiculously Long Car Rides:

Luckily, car rides are about 90% more forgiving than airplanes. You can bring (almost) any food or drink, which means there are lots of choices. I like choices.

My favorite car ride snacks:

All of the above

Chopped up fruits

Chopped up Veggies

Cereal (obviously without the milk)

Fruit Leathers (I’m obsessed)

Cheeeeeeeese (I’ll eat cheese with almost anything. Except chocolate.)

If you are like my parents, you can get super fancy with this. They’re known to snack on sliced apples/pears with fancy cheese and crackers anywhere they go.

If your in a car for a million hours, why not get a little fancy? If it’s anything like my 15 hour drive to Arizona, you’ll need all the extra fancy you can get.

Apples & Carrots

Breakfast:

Continuing on with my current challenge to try a new recipe every week, I choose Chelsey’s Apple Pie Overnight Oats. I threw the overnight oats into my fridge overnight to blend together and be ready for me in the AM! And boy did those apples smell delicious as they were heating up in the microwave!

sooo good!

The Mix:

1/3 cup oats 

1/3 cup water

1/3 cup almond milk

1/2 banana, smashed

1 tbsp ground flax

1 tsp vanilla

cinnamon

1 diced green apple (microved w/ cinnamon & vanilla for a minute & a half)

a tbsp of peanut butter, of course!

I heated it up in the morning for about 30 seconds. I think the cold oatmeal texture freaks me out, but it’s pretty hot outside so I made the oatmeal room temp. I paired it with a cup of black coffee..I can’t imagine a morning without black coffee! This bowl of oatmeal was one of the best I’ve had. The apples were perfect after being cooked with the cinnmon and vanilla and the oats were super creamy. Last night while I was putting my overnight oats together I froze two waterbottles so I’ll have cold water tomorrow at work and I also boiled up some whole wheat pasta for lunch today.

Lunch: 

For lunch today I brought in a bowl of pasta with marinara sauce, half of a red pepper, garlic and paramasean cheese with a side of carrots. I’m obsessed with carrot sticks!

I can’t stress enough how much easier my life feels when I prepare my meals the night before. Last night I made my overnight oats, pasta and cut up some veggies all within 25 minutes. It assures that I get my nutrients in no matter how busy I am!

Preparing for the Day

I’m a list-maker. I like to plan things out and have them written down so I don’t forget anything. It helps me sort things out and empty my brain. This goes for groceries, meals, schedules and sometimes I use my lists to help me make decisions. Pros & Cons lists, anyone?

Sometimes planning ahead is necessary when you know your about to have a busy day. It’s actually a great way for people who are always “on the go” to assure they are getting proper nutrients through the day. While making dinner I like to chop up extra fruits & vegetables for the next day. Take 10 minutes before you go to bed to chop up meat to add to sandwiches or salads. While preparing meals, make a couple servings extra to store in the fridge or freezer for the next couple days! Tomorrow I have to work all day so tonight has been full of planning. Earlier today I set a challenge for myself: try a new recipe everyday. After spending quite some time searching around the internet, I found the recipe to kick off my challenge: a spinoff of Angela’s Strawberry Carob Vegan Overnight Oats.

I say it’s a spinoff because I don’t have the exact ingredients. Oops!

I mixed together:

.5 cup rolled oats

1.5 cup almond breeze

1 tbsp ground flax seeds

1/2 tsp vanilla (ok..a little more than that because I love vanilla!)

1 tbsp cocoa powder (unsweetened)

1/2 diced banana

6 chopped strawberries

all stirred up!

I also prepared my lunch for tomorrow..a green apple (my favorite), peanut butter toffee Clif Bar and lots and lots of carrot sticks! I looooove carrots…I eat them like a rabbit! I think I may be getting an orange tint to my skin from them 😉

I work at a summer camp so I am in the sun all day. Eating a huge lunch doesn’t sit well in my stomach when I spend a lot of time in the sun so I typically eat a pretty small lunch. I’m also planning on making some iced coffee for an extra pep to my step…I’m going to need it!
