Chocolatey S’mores Cupcakes

Chocolatey S’mores Cupcakes

(makes 6 cupcakes)

Ingredients:

1 1/4 cup all-purpose flour

1/4 cup cocoa powder

1 1/2 tsp baking soda

1/2 tsp salt

1/2 cup brown sugar

1 egg

1 cup water

1.5 tsp vanilla extract

1/2 cup applesauce

marshmallows

graham crackers

preheat oven to 350

mix wet ingredients together

sift dry ingredients into to wet mixture. mix until batter is smooth.

bake 15-17 minutes (take them out before they are completely done, the broiler will bake them a tiny bit more)

once cupcakes are finished, slit two lines in cupcakes with a knife. place two (or as many as you can) marshmallows in each slit, and a couple more in between. basically, as many as will stay on. for me, it was 6. place under broiler until golden. make sure to keep an eye on them, never look away! you want them to get golden and melty. crush two graham cracker sheets and sprinkle over top. eat & enjoy!

These are really dense chocolate cupcakes and sooo good. If left over, make sure to heat before eating and add more marshmallows if they fit!

White Chocolate Cranberry Cookies

White Chocolate Cranberry Cookies

(makes 24 large cookies)

Ingredients:

1 cup softened butter

2 eggs

.5 cup sugar

.5 cup brown sugar

1.5 tsp vanilla

2 cup all-purpose flour

3/4 cup oats

1 tsp baking soda

1/4 tsp salt

1 cup white chocolate chips

.5 cup dried cranberries

 Bake at 350

Preheat oven to 350

Mix flour, oats, baking soda, salt together in large bowl

Mix butter, eggs, sugars, vanilla together in small bowl

Combine wet ingredients into dry ingredients. Add white chocolate chips & cranberries when thoroughly mixed

Bake at 350 for 15-17 minutes

Chocolate Chip Blueberry Muffins

Chocolate Chip Blueberry Muffins

(makes 12 muffins)

1 cup all-purpose flour

3/4 cup oats

1 tbsp flax seed

1tbsp baking powder

1/4 tsp salt

1 tsp cinnamon

.75 cup milk (I used almond milk, but any will work)

.5 cup greek yogurt

1 tsp vanilla

1/4 cup agave

1 cup fresh blueberries

.5 cup chocolate chips (I used semi-sweet, but I’m sure dark chocolate would be great!)

.5 cup walnuts (optional)

 Bake 425 15-20 min

Pre-heat oven to 425

In a bowl, mix flour, oats, flax, baking powder, salt, and cinnamon together

In a separate bowl, mix milk, yogurt, vanilla and agave together

Slowly stir dry into wet (or wet into dry), fold in blueberries, chocolate chips and walnuts if you are adding them.

Be sure not to over mix, or the muffins will get tough.

Grease muffin pan (or put in cupcake liners) and fill up with batter.

This Week’s Weekly Challenge: Exercise Daily

I’ve been crazy busy the past couple weeks and have not been making exercise a priority in my schedule. This week I want to change that! I will be doing some form of exercise everyday, whether it’s for 10 minutes or an hour. I think it’s really important to always put some time in your day to workout, not only for your health, but to make you feel good! I’ll be posting my workouts everyday to keep record.
