Meal Planning: Traveling

Traveling can be stressful, hectic, annoying and one big hassle. The airplane makes you germy, you have to go to the bathroom 10x more than usual during roadtrips and let’s face it, you don’t eat as many veggies as you should while your laying by the pool at your hotel sipping cold drinks.

It’s ok, I won’t tell.

After reading this post of the Meal Planning series, you won’t have to count that chunk of pineapple sitting on the rim of your glass as your only fruit you’ll eat that week.

Or you can. Again, I won’t tell.

Airplane:

I don’t know about you, but traveling on an airplane is pretty much the most uncomfortable feeling in the world to me. You’re super stressed about getting to the airport on time. Security is taking forever. You have exactly 2 seconds to take your shoes and jacket off, place them on the belt along with your bag, purse, pillow and computer (which you have taken out of your bag). Make sure it is only 2 seconds though, otherwise you will get barked at for not going superspeed. Then, you have about 3 seconds to quickly throw all of your stuff off of the belt, put your shoes on, jacket on, computer in your bag, grab all your stuff and run to the gate only to find out your flight is delayed and you get to sit there for an hour. So what do you do? Buy a couple $10 celebrity gossip magazines to see if David Beckham is single yet? Paint your nails? Go buy a $20 bag of chips? No you will not, because you planned ahead!!

Dried Fruit (Sometimes they don’t let you take this through security…if not, do the puppy dog face. If you do it right, you can get anything.)

(this was taken after my dust/wind/rain storm at the Grand Canyon so it’s a little more miserable than usual…but you get the idea)

Popcorn

TrailMix (yes, trail mix with m&m’s still count. I can’t stand raisins, or “little brains” as my brother calls them, so I substitute them with chocolate!)

Sandwiches (I leave off the mustard until I get into the airport and just grab the little packets)

Pretzels

Ridiculously Long Car Rides:

Luckily, car rides are about 90% more forgiving than airplanes. You can bring (almost) any food or drink, which means there are lots of choices. I like choices.

My favorite car ride snacks:

All of the above

Chopped up fruits

Chopped up Veggies

Cereal (obviously without the milk)

Fruit Leathers (I’m obsessed)

Cheeeeeeeese (I’ll eat cheese with almost anything. Except chocolate.)

If you are like my parents, you can get super fancy with this. They’re known to snack on sliced apples/pears with fancy cheese and crackers anywhere they go.

If your in a car for a million hours, why not get a little fancy? If it’s anything like my 15 hour drive to Arizona, you’ll need all the extra fancy you can get.

Roadtrip: Arizona, San Diego, Huntington Beach Recap

This morning I woke up with a raging migraine. Remember when I told you a brief summary about my migraines not too long ago? Today was one of those days. I woke up to my vision being fuzzy and I couldn’t even move my head without feeling naucious and like someone had smashed my head against a wall.

I was dying for a So Berry Good Smoothie, so I threw all of the ingredients into the blender and quickly ran out of the room away from the noise while it blended up. The cold smoothie totally hit the spot and helped relieve the pressure in my head.

Not the best way to wake up, but I’ve been laying in bed all day catching up on work I missed while on vacation. I was able to work on a few blog-related items, my speech for a meeting on Wednesday, finally uploading all of my pictures from the roadtrip, and cuddling with my dogs (which is my favorite thing to do after coming home from vacation).

Because really, who wants to leave these faces?

I love them!!

I’m super excited to finally be able to share my roadtrip pictures, so here they are!

The week was full of wind/dust/rain storms in the Grand Canyon, Shopping in Flagstaff, AZ, Swimming, Tanning, Fireworks, Visiting Schools, Beaches, Getting Lost, Yummy Dinners at a ’50’s diner, Little Italy and local restaurants, and Lots of Walking Around!!

There you go! Of course I have a million more pictures, but I didn’t want to bore you of the same ones over & over. I had a blast on my roadtrip and I hope you enjoy the pictures!! I have a ton of great recipes in the works and a few ideas I’m really excited to put together within the next couple of weeks. This is going to be a great month!

The End

I’m sad.

Very sad.

Today is my last day on vacation.

Ends of vacations really shouldn’t exist. I mean really, who wants a vacation to end? You’re on the beach, or the river, or in the middle of a desert. You’re having a blast. Maybe a cold drink in your hand, who knows. Then all the sudden the day arrives. The day when you realize tomorrow you go home. Back to the real world. To the bills, the work, making your own buger rather than letting a cool ’50’s restaurant make it for you.

Good Night San Diego

I’m having a blast on this roadtrip! I can’t wait to post all the pictures when it’s finished!! Today we were in San Diego…it was a busy day! I’m also taking a ton of pictures for my Weekly Challenge #3! I haven’t had internet access until today, so all my posts have been through my phone. Not so great. Now my posts can be a little more normal!

Breakfast:

Today we went to the continental breakfast at our hotel to grab some breakfast. It was in a tiny room that looked like a ski lodge. Pretty random in San Diego, right? There were Cheerios, Raisin Bran, Oatmeal, Make Your Own Waffles (pretty cool!), and fruit. I ended up grabbing an apple and orange on the way out to have later. The food choice wasn’t that great but it was free so I’m not complaining.

There was a free Quaker Maple & Brown Sugar oatmeal packet with a cup of coffee.

It was not filling at all so I ended up eating my apple when we got to the hotel. I guess all those toppings I put on my oatmeal at home really do help fill me up. I really missed the peanut butter on my oatmeal!!

Lunch:

After traveling aroung San Diego State University’s campus, we found a small Mexican restaurant. The campus is huge so after a ton of walking, we were starving!


I had a veggie burrito with guac, potato, lettuce, beans, cheese and tomatoes. Wasn’t really a veggie burrito but it was pretty good! Later we went to the beach. Of course we decided to go when it was overcast but it was still awesome to see one of the best beaches in San Diego!

Dinner: 

We found a great restaurant called Studio Diner for dinner. It was a 1950’s themed diner that had fantastic food. I ordered the burger with pepperjack cheese, guac & salsa (I think it’s called the San Diegan burger?) and it was soooo good. This was actually the very first time I have ordered a burger in a restaurant!

Of course we saw someone else drinking a milkshake, so we had to get one too! I ordered a coffee milkshake. Ohmygod. Sooo good.

This restaurant was awesome! I can’t wait to share the rest of the pictures from my trip. There are so many!!

Dirt

The past couple of days have been a blur from all of the traveling, but I’ve been having a blast! Once we arrived in Arizona yesterday morning, we spent the day relaxing by the pool and swimming. Later that night, we decided to drive to Flagstaff to stay the night. The town was adorable and I totally fell in love with the local friendly atmosphere. We ate dinner (as posted last night) and fell asleep early. I was completely exhausted after being awake 40 hours.
Today started off with a Cranberry walnut bagel from a small bagel shop in Flagstaff. At around 12 we headed to the grand canyon to go hiking and take a ton of pictures. At about 1 we noticed some storm clouds, but decided to keep going because it was awesome to be there! About ten minutes later there was thunder and lightening. We kept taking pictures and hiking until all the sudden, the wind storm came. Literally, a if a light switch got turned on, dirt and rocks were being hurled at us and we couldnt even see because of the wind. We started running through the wind to get to a bus and almost got blown off the cliff! I’ve never felt that much wind power. So crazy!! I am now caked with dirt.
Dinner and the rest of the night was a little less dusty. I had the most perfect pesto pizza ive ever eaten. We walked around & shopped and I fell in love with flagstaff. I’m exhausted but today was so worth it.
Tomorrow’s Monday…and that means a new weekly challenge!! See you all tomorrow!

No Time to Sleep

It took us 15 hours to get to Arizona and I got about 10 minutes of sleep total. That means I’ve been up for about 38 hours so far, so I’m a little delirious but I’m gonna do my best to sound like a functional human being. The past 15 hours have felt like one big blur. This is the longest drive ive taken for a road trip, but it was worth it!! When we arrived we went down to the gorgeous pool at the apartment complex we are staying in. Laying by the pool was crazy relaxing but the best part was actually being able to get into the pool because the temperature was so high!

Breakfast:

Since midnight I have had a Clif peanut toffee buzz, a handful of “cheddar cheese things” aka Quaker cheddar cheese rice cakes, and a big cup of gas station coffee at 4am.

Lunch:

Lunch was real food!! I was so excited. We went to a great shop with yummy treats and sandwiches. I chose the veggie sandwich with cucumber, sprouts, artichoke, tomato and goat cheese on a flat bread. yum!!!

Dinner:

Black bean veggie burger w/ fries

Tomorrow I’ll have a recap of Weekly Challenge #2: Vegetarian Week! See you tomorrow!!
